If you’ve been anywhere around here lately, you may have heard about a hotel we just opened, Loews Sapphire Falls Resort.

I mean, sure it’s beautiful and tropical and paradise-ical and all that. Can’t be denied. But from the minute I walked in, I knew there was one place I had to find out more about—Strong Water Tavern.

Tucked away in the lobby, this is a rum bar like no other. To find out more about this hideaway, I chatted with a few of the guys who helped bring it to life.

Phil Klinkenberg, Associate Director of Food and Beverage for Loews Sapphire Falls Resort, took me inside the creative planning for Strong Water Tavern. The goal was simple: create the ultimate place to relax. And whether you’re looking for an intimate escape for two or a large, communal table for a group of friends, you’ll find your seat here.

On top of that, Phil shared with me the vision behind the delicious food offerings. Taking inspiration from around the Caribbean, the tapas menu at Strong Water Tavern is a treat for the palate. Fresh ceviche, plump empanadas, and perfectly-spiced vaca frita are just a few of the standouts.

From there, it was on to meet with Eben Klem, resident mixologist and bar consultant for Loews Hotels. Eben took the vision for Strong Water Tavern and helped create it’s unique, rum-forward cocktail program.

Did you know there are over 60 types of rums behind the bar, all available for tasting? Plus, they even age their favorite rums in white oak barrels, right there at the bar. You can try rums that you literally can’t get anywhere else.

From new twists on old classics to brand new cocktails created just for Strong Water Tavern, your new favorite drink is just waiting to be discovered.
